We, the Gerlachs, are Waldeckers through and through. Rooted in the region, yet open to the wider world. This is also reflected in our menu: We offer both down-to-earth, traditional dishes and international fare, prepared—whenever possible—with fresh, locally sourced ingredients.
Sustainability is the order of the day; freshness is our motto. That’s also why we started raising a small herd of cattle years ago—a herd that has since grown to the point where we can cover a large portion of our kitchen’s needs with the meat. So we’re also a bit proud to be recognized today as an organic and certified agricultural operation. Isn’t it good to know that our animals are raised in a species-appropriate manner and are allowed to grow up outdoors? Feeding and caring for them has now become a passion for our host, Christian Gerlach.
We prefer to buy vegetables, fruit, eggs, game, and poultry from regional producers and suppliers. This keeps transportation distances short and is better for the environment. During game season in the fall, local hunters supply us. The delicious, crispy St. Martin’s goose had previously enjoyed a happy life, raised in a species-appropriate manner on the large goose pasture at a neighboring farm.
